Why can't cups convert to grams directly?
Cups measure volume; grams measure weight. The conversion depends on density: 1 cup of all-purpose flour weighs about 120 g, granulated sugar about 200 g, and butter about 227 g. When a recipe matters (baking especially), weigh ingredients in grams.
