How do you scale a recipe?
Divide the servings you want by the servings the recipe was written for — that's your scale factor — then multiply every ingredient quantity by it. Going from 4 servings to 6 is a factor of 1.5, so 2 cups of flour becomes 3 cups.
What doesn't scale linearly?
Salt, chili, and other taste-driven seasonings should be scaled to about 75% of the math and adjusted at the end. Leaveners (baking soda, baking powder, yeast) get slightly less efficient in bigger batches, and pan size and bake time change before ingredient ratios do — a doubled cake usually wants two pans, not double the time.
